Gran Turismo’s force feedback model provides a very strong centering force to the wheel which, in certain cars (especially the Gr.3-Gr.1 models) can result in oscillations in the wheel. You can mitigate this somewhat using the Dampener setting on the wheel base, but the main contributor to this is the Max Torque and Force Feedback Sensitivity settings in the game’s options.
Increasing the Force Feedback Sensitivity will make the steering forces even more responsive, which will exacerbate the oscillation. Reducing it to 1 will help, but if the oscillations are still too strong, you’ll need to reduce the Max Torque setting.
